Spicy Sausage Noodles

I love noodles almost as much as I love pasta, they are after all, very similar. The difference being that Pasta is made from durum semolina, and noodles from flour milled from common wheat. Noodles are great as you can add them into stir fries, into slurpy broths or as dish like this as the main component. You serve them so differently to pasta it makes an entirely different type of dish.

This recipe was another adapted from the BBC Good Food Magazine where there were two whole pages devoted to quick sausage recipes. Again, super easy and super speedy. Just 4 mins prep and 10 minutes of cooking!

Ingredients (Serves 2):

  • 3 sausages, meat squeezed out from skins
  • 1 garlic clove, crushed
  • thumb size piece of ginger, grated
  • 1 red chilli, chopped
  • 1 tbsp sesame oil
  • 200g green beans
  • 200g straight to wok udon noodles
  • 1 tbsp soy sauce
  • Fresh coriander to serve
  • 1 tbsp sesame seeds to serve

Method:

  1. Mix the sausage meat, garlic, ginger and chilli together and fry in the sesame oil until the sausage is cooked in a wok with a lid. (Lid removed at this stage)
  2. Add the green beans and fry for a minute before adding the noodles along with the soy sauce
  3. Add 2 tbsp of water, and put the lid on and allow to steam to cook the beans through for a couple of minutes.
  4. Dish up, topping with the coriander and sesame seeds
